BASIC CANNING CLASS

This is a basic class on canning beans and meats for long-term storage. We will use the Kuhn Rikon Pressure Cookers as well as the bigger canners we sell here in the center. We’ll start with beans, such as, Pinto, Kidney etc. Then we’ll teach how very simple it is to pressure can chicken, beef and pork, you can even bottle fish if you desire. This class will fill up fast so plan ahead and sign up early. Come hungry and enjoy dinner with us made from canned products.

LOV'N FROM THE OVEN
Cranberry-Vanilla Seed Bread

In Bosch Universal Mixer bowl with dough hook, add:

6 Cups warm water, approx. 115°
2/3 Cup canola oil
2/3 Cup honey
2 Tbsp. vanilla
2 Tbsp. sea salt
3 Tbsp. dough enhancer
2 Cups high-gluten flour
6 Cups fresh ground whole wheat flour
3 Tbsp. SAF instant yeast
3 Cups seed mix (see "Seed Mixture", right)
2 Cups dried cranberries
1/2 Cup potato flour

Seed Mixture:

2 cups pumpkin seeds
2 cups sunflower seeds
2 cups sesame seeds
2 cups sliced almonds
1 cup flax seeds

Add ingredients in order listed; mix thoroughly; continue to add fresh ground whole wheat flour until the dough cleans the sides of the bowl. (May take 6 to 8 cups more whole wheat flour)

Knead on speed two for 8 minutes or until the gluten is developed.

Form into 5 loaves.

Brush with beaten egg wash, roll in seed mix, and place in bread pan.

Cover and let rise until double in size, approx. 2” above the rim of the pan.

Bake 35-40 minutes or until the internal temperature reads 200°.
