 Shar's Recipes: Chicken With Rice

Ingredients
If using the 2 litre pressure frypan:
- 4 boneless, skinless chicken breasts
- 1 cup white basmati rice (see note)
- 2 cups water
- ¼ cup chicken broth powder
- 1 cup frozen mixed vegetables
If using the 5 litre pressure frypan:
- 6 boneless, skinless chicken breasts
- 2 cups white basmati rice (see note)
- 4 cups water
- ½ cup chicken broth powder
- 2 cups frozen mixed vegetables

Directions
Heat pressure pan until a small amount of the water splashed in the bottom of the pan forms balls and rolls around. Brown chicken on both sides. Add rice and water mixed with chicken broth and bring to boil. Place lid on pan and on medium-high heat bring to second red ring; maintain pressure for 5 minutes. Drop pressure with cold water on the rim, add vegetables, close lid and allow pan to sit 10 minutes.
Suggestion:
- Stir in one can of Campbell's roasted chicken soup with savory herbs or cream of mushroom with roasted garlic and herbs to make gravy with the chicken.
Note:
- If using brown basmati rice, remove chicken before adding rice. Brown basmati must cook for 20 minutes. Drop pressure under cold water, add chicken and vegetables, replace lid and allow to sit for 15 minutes.
